I love this time of year. The bright sunny days and the crisp evenings. I love the fall colors, and, of course, harvest time!

Our awesome staff are harvesting the olive leaves right now. It is the perfect time. The fruit on the trees turns a burnt-orange color and the birds are feasting on them.

That is okay by us.... we are just after the amazing leaves that help keep us cold-free, flu-free, and are a significant part of our travel plans.

We have no concern about recycled air in the planes or on the cruise ships... or even a concern about food poisoning.... the olive leaf has always taken good care of us in our travels at home and abroad.

 "LET THEM EAT CAKE!!!"

With Thanksgiving fast approaching, (Oct. 12 in Canada & Nov.26 in U.S.A.) I thought it would be great to offer you an awesome "Chocolatey-type" treat that will work for just about everyone.

This recipe will work if any of your guests are VEGAN, VEGETARIAN, GLUTEN-INTOLERANT, or adhering to the PALEO way of eating. This means if they can't have any kind meat, fish, poultry, dairy, eggs, grains, soy, or caffeine you have covered a lot of ground! It doesn't even have much blood sugar affecting sweetener, so even the Diabetics could partake!! Besides the natural good fat from the almond flour will slow down the absorption rate The best part is if you don't tell anyone else, they will think they are eating just another tasty chocolate cake!!!

I hope you enjoy this recipe as much as we have. Just one more tip, I like to serve cake and other treats with fruit. The reason, it fills you up with natural fruit sweetness and there is a better chance you will feel fuller faster and won't be tempted to have that second slice! LOL!!! Well sometimes that works and other times it doesn't, but the theory is good ENJOY!

almond carob cake


ALMOND CAROB CAKE

Bonus*** This cake is MOSTLY ALKALIZING too!

  • 3 cups of almond flour (I prefer to grind the almonds in my Vita Mix)
  • 1/3 cup roasted carob powder (tastes similar to chocolate without the caffeine)
  • 2 teaspoons of baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup maple syrup
  • 1/4 teaspoon Suede Hills green stevia
  • 1/4 cup coconut oil, warmed and melted
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce
  • 4 Tablespoons apple cider vinegar

* Preheat oven to 325 degrees F

* Next line the bottom of a spring form pan with parchment paper. I also like to spray olive oil on the sides of the pan.

* In a small bowl combine: maple syrup, green stevia, melted coconut oil, vanilla, and unsweetened applesauce. (save the vinegar for later).

* In a large bowl mix the dry ingredients together.

* Add the wet ingredients (minus the vinegar) to the dry ingredients. This mixture will be thicker than usual.

* Add the apple cider vinegar to the mix and stir quickly so you get the levening benefit of the vinegar with the soda.

* Pour the mix into your spring form pan.

* Bake for 30-35 minutes or until inserted toothpick comes out clean.

* Let the cake COOL COMPLETELY, before taking it out of the pan, otherwise it may crumble.

I like to serve the cake with fresh fruit on top of each serving so that there is a better chance that we will get filled up and not be so tempted to go for a second piece! LOL!!!! Sometimes my theory works and sometimes it doesn't! Phil is most often found to be digging into a second piece no matter what I do. This cake would be really good with fresh strawberries, or a few raspberries on top or even frosted with the filling from Cindy's Awesome Raw Chocolate Pie.

The options are endless. Play with your food and have fun!
