June 2013 - It's Gluten Free for Me

Happy June to you!

We love June around here, because the first week or so of June the Olive trees come into flower and there is this amazing smell that resembles vanilla wafting through the air! It is absolutely glorious!

It's Gluten Free for me!!

92EAT ME I am gluten free! There is such controversy these days about gluten, gluten intolerance, and Celiac Disease.

I personally have had a positive experience by just eliminating gluten, and in particular, wheat. You have to be very diligent though...there is wheat hidden in foods that you would never expect to find wheat. According to the book "Wheat Belly" wheat is being used in so many products because of its addictive qualities. Though you rarely hear the term GMO wheat, wheat has been "hybridized" since the seventies. Now apparently the wheat we consume today can actually cross the blood brain barrier! When it does it apparently attaches to the opiate receptors in our brain and thus the addiction is born.

No matter the reason I find that my entire system functions better without this type of "food". Bloating can be a thing of the past, as the wheat/gluten is expelled from your body when you switch to a more alkaline diet.

Below is a list of UNSAFE grains and grain products as outlined by the Canadian Celiac Association.
Barley, Bulgar, Cereal Binding, Couscous, Durham, Einkorn, Emmer, Filler, Farro, Graham Flour, Kamut, Malt, Malt Flavouring, Matzoh Flour, Oats**, Oat Gum, Roux, Rye, Semolina, Spelt (Dinkel), Triticale, Wheat, Wheat Germ.

(** Oats are a part of the gluten free diet in places like Finland and Sweden. In North America, oats are often grown and processed in the same facilities as wheat and rye therefore there could be gluten cross contaminated. There are Celiac-safe oats available. The Celiac Scene www.theceliacscene.com has more information of how and where to find oats and other safe grain products.)

Now for some of the SAFE grains and foods.

Amaranth, Arrowroot, Buckwheat, Cassava, Corn (though most is GMO) Dahl, Dried Legumes, Flax, Millet, Nuts, Poi, Polenta, Potatoes, Quinoa, Rice, Sorghum, Tapioca, Teff, Wild Rice.

Of course all Fresh Fruits, Vegetables and ALL of Suede Hills products are gluten-free!!!! So enjoy your gluten-free Phil's Ultimate Breakfast with a Schmunkie!!

I personally use Buckwheat, Millet, Quinoa, Rice, Sorghum Tapioca, and Teff to make treats for Phil and myself, plus we find that Oats work fine for us.

Your healthiest choices are fresh fruits, veggies, and leafy greens (like Alflafa, Kale, Chard etc.) Save the grains for only a few times per week. Your waistline will thank you for it!!  

The QUESTIONABLE products require you to diligently read labels and use caution!

Phil just heard someone call in on CBC Radio yesterday, a man who had started a gluten-free diet after reading the book Wheat Belly. He had been on insulin injections for his Diabetes, but has now come off the injection (in 6 weeks I believe) and is controlling his blood sugar levels with his diet. He found that wheat/gluten was playing a major role is his negatively manifested health issues.

Wheat creates an acidic environment in your body therefore the pancreas is overtaxed and Diabetes is the result. As we always say....

Get Alkaline = Get Well

you can do it by what you add,

or what you eliminate or both

but the choice is yours!
