March 2021 - Vegan Goodies from our Suede Hills Kitchen

We are so looking forward to getting out in the fields soon.

The Green Stevia seedlings have popped up in the starter trays!

At the moment the sun is shining.

Phil is out trimming Olive Trees before they start to sprout new buds. There are at least a dozen different birds hanging out at our place. Many are eating the Olive tree fruit from last season. Even the deer have been eating the olive tree fruit!

Vegan Goodies from our Suede Hills Kitchen

Today I have a recipe for you which a professional baker wanted the recipe for. I took that as a compliment and thought you folks may enjoy it too.

There seems to be an ever growing interest in becoming Vegan or at least switching to a Plant-Food only lifestyle. This is very exciting!

I am often asked, "What do you eat?"

So a couple of years ago I wrote afull color, 139 page recipe book with many tips and tricks plus a number of transitional recipes to get you going. It has savory dishes, sweet treats, sauces, dips and even raw hot soups!

Today's recipe is NOT in the book.

Phils Ultimate Breakfast with a Schmunkie

Whole Grain Vegan Banana Bread

Preheat oven to 350 F degrees.
I spray my loaf pan with olive oil.
(each loaf is 3x5 inches, makes 4)
**All ingredients are organic where possible.

Start by grinding 2 1/2 Tb. Flax Seeds,
place in a small bowl
with 7 Tb. Water,
set aside to thicken.
In a large bowl mix together the following ingredients:
4 ripe Bananas mashed
1 1/2 tsp. Suede Hills Green Stevia powder
2 cuplets (2/3 c) Applesauce
1 tsp. Vanilla extract
1 Tb. Olive Oil
2 Tb. Maple Syrup
The Zest of 1 Lemon
The juice of 1/4 Lemon

Add the Flax seed mixture.
Stir well.
Note~ I grind my own flour
with my Vita Mix Dry Blade Container.
If you decide to go Vegan
I highly recommend you invest in a Vita Mix,
and splurge on getting the Dry Blade Container as well.

**Feel free to use pre-ground flours
if that is all that you have access to.
You may have to add additional flour because 2 cups of grain will make more than 2 cups of flour.

In a separate bowl combine the following ingredients:

Grind together into flour, then add to the bowl,
2 cups Einkorn Whole Grain Wheat
1/2 cup Raw Almonds
1/2 cup Rolled Oats

Add to the bowl
1/2 cup Chana (Chick Pea) Flour
2 tsp. Baking Powder
1 tsp. Baking Soda
1/2 tsp. Pink Himalayan Salt
Stir thoroughly.
Add dry ingredients to the wet ingredients.
Gently Stir to Mix.
Spoon into loaf pans.
Sprinkle with Sliced Almonds if desired.

Bake at 350 F for 30 minutes.
Cool on rack for 10-15 minutes
before removing from the pan.

** Once cooled I slice them and freeze them.
Otherwise we would eat all of them in 2 days!!


Just a couple of notes to add.

In these uncertain and ever shifting times,

I encourage you to have extra supplies on hand

that have a long storage life

if at all possible.

One thing I have personally done is

bought large bags of dried Chick Peas,

which I can cook and eat

OR make into a fabulous flour.

I then have flexibility and can make all manner

of goodies either sweet or savory.

I also buy large bags of whole grains such as the

Einkorn Wheat, Rye, Buckwheat, Rolled or Whole Oats

etc. and then just grind them as I need them.

The whole grain stays fresh longer than pre-ground flour.

There are a core group of 8-10 recipes in my book

Recently I have been experimenting
with different types of sauces & dips
to lend a diversity of flavors
to the fruits, veggies and grains we eat.
I encourage you to play with your food too!

For those environmentally minded folks out there, eating Plant Foods is a huge step
towards helping our planet heal.
Deforestation, Greenhouse Gases,
Water Waste & Pollution
are just a few of the areas
that would be dramatically improved.
Not to mention removing yourself from the cycle of cruelty perpetrated on other
defenseless sentient beings.

How is it that we expect the "dead" flesh
of another being
to bring life and health to our flesh?

No judgement, I was raised the same as you;
meat, potato and veg.
Our parents did the best they could
with the info available to them at that time.
But NOW we know better.

Most if not all the athletic records being broken
these days are by Vegans.
Many Heart-Surgeons are Vegan too!
They can not deny the data.
